Incorporating Nutrition
Many professionals have been told that nutrition is
beyond their scope of practice; other professionals incorporate nutrition and
are unaware of the legal issues involved.
This home study course focuses on the types of nutrition education/services
that can be incorporated while still adhering to all state licensure laws and
the American Dietetics Association guidelines. A proposed “Scope of Practice” in nutrition for health and fitness professionals, by The American Academy of
Sports Dietitians and Nutritionists, is discussed in detail. (For more information

This course provides: In depth discussion of energy nutrient utilization during rest, exercise, fasting, illness, and stress; determination of ranges of caloric and nutrient intake for optimal performance and health; details on implementation of nutritional sessions (from initial interview, assessment, analysis and through ten individualized sessions).
Upon completion of this home study course, participants qualify to complete the prestigious credential of Nutrition Specialist through the American Academy of Sports Dietitians and Nutritionists (AASDN) at a reduced cost. Course Theme: The theme of this course is to provide health and fitness professionals with a hands on experience of how to incorporate nutrition into their wellness programs while adhering to all state licensure laws and the American Dietetics Association guidelines.
Course Goals:
The main goal of this program is to educate professionals on how to safely,
professionally, and legally incorporate nutrition into their wellness/fitness
programs; and to provide a hands on experience for incorporating nutritional sessions.
Course Objectives:
1. Lecture 1 – Incorporating Nutrition. Students will be able to: discuss
the importance of incorporating nutrition (combat obesity, combat misinformation,
improve client success, provide added skill, increase income); discuss the state
licensure laws, ADA guidelines, and a proposed scope of practice by the American
Academy of Sports Dietitians & Nutritionists; discuss the components of
successfully incorporating nutrition; identify clients that are ready to make
changes (Stages of Readiness to Change and Motivational Interviewing); acquire
sensitivity to obese population; discuss the importance of a unique perspective.

2. Assignment 1 - Students are asked to complete an assignment
after lecture 1. The assignment centers on licensure laws and ADA guidelines; producing a personal
mission statement; analyzing two programs that incorporate nutrition,
interviewing two individuals involved with
these programs and itemizing what these individuals like and do not like about the programs. (2.5 hours to complete this assignment)
3. Workshop 1 - Students are asked to provide comments on previous student assignments. (2.5 hours)
4. Lecture 2 – Constructing Your Program. Students will be able to: discuss
the types of services health and fitness professionals can provide (in conjunction
with a licensed dietitian/nutritionist) along with details of how to provide
such services; identify populations that are apparently healthy and populations
that must be referred to a qualified professional; discuss issues associated
with building a client base - finding clients that are ready to make lifestyle
changes. (114 minute lecture on CD)
5. Assignment 2 - Students are asked to complete an assignment
after lecture 2. Students are asked to itemize the services provided
by the two businesses listed in assignment 1; to identify and provide specifics
about the types of services/ populations that the student will incorporate into
his/her program (keeping in mind the legal and professional issues); design
a legal agreement and a responsibility agreement (template included); design educational handouts,
and provide wording for promotional materials that accurately (and legally)
portrays services and programs (templates included). Students are asked to attend a free lecture,
local event, health fair, or community meeting; introduce themselves to several
individuals; describe their program to these individuals; ask for input from
these individuals, and summarize the results. (2.5 hours to complete the assignment)
6. Workshop 2 - Students are asked to provide comments on previous student assignments. (3 hours)
7. Lecture 3 – Implementing Your Program. Students will be able to: Discuss
details of incorporating nutrition sessions (from the initial interview, assessment,
analysis, results of the analysis, through a ten session outline). (90 minute
lecture on CD)
8. Assignment 3 - Students are asked to recruit two volunteers. For each
volunteer, students are asked to complete an initial interview and determine
the client’s “Stage or Readiness to Change”; obtain signed
agreements from both volunteers; perform body composition analysis on each volunteer;
complete a diet analysis (utilizing the Nutrition Manager Diet Analysis Software) for each volunteer; compile the results for each volunteer;
provide a template of what a ten session program would look like for each volunteer (1/2 hour sessions). (5.5
hours to complete the assignment)
9. Workshop 3 - Students are asked to provide comments on previous student assignments. (3 hours)
